Description

Delicious Crème Brûlée Cheesecake Cupcakes that combine the rich flavors of cheesecake with a caramelized sugar topping.


Ingredients

  • 9 graham crackers, finely crushed
  • 6 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 egg yolks
  • 1/2 cup sour cream
  • 1 pinch salt
  • 1/3 cup superfine sugar

Instructions

  1. Preheat oven to 275°F (135°C). Line a muffin tin with cupcake liners.
  2. Crush 9 graham crackers, and place in a small bowl. Stir in 6 tablespoons melted butter and 1/4 cup granulated sugar until evenly combined. Divide mixture evenly among cupcake liners and press firmly into the bottoms to form the crust.
  3. In a large bowl, beat 16 ounces cream cheese and 1/2 cup granulated sugar until smooth and creamy. Add 1 teaspoon vanilla extract, 1 egg, 2 egg yolks, 1/2 cup sour cream, and 1 pinch salt. Beat until fully combined and smooth, scraping down the sides as needed.
  4. Spoon cheesecake batter into liners, filling each about ¾ full.
  5. Bake for 22–25 minutes, or until centers are set but still slightly jiggly.
  6. Remove from oven and allow cupcakes to cool completely in the pan. Refrigerate for at least 2 hours before removing liners.
  7. Once chilled, remove cupcake liners. Sprinkle about 1 teaspoon superfine sugar evenly over the top of each cheesecake.
  8. Use a kitchen torch to caramelize the sugar until golden and glassy. Alternatively, place cheesecakes on a baking sheet under the oven broiler, watching closely and rotating as needed until sugar is caramelized.
  9. Serve chilled.
