Delicious Crème Brûlée Cheesecake Cupcakes that combine the rich flavors of cheesecake with a caramelized sugar topping.

- 9 graham crackers, finely crushed
- 6 tablespoons melted butter
- 1/4 cup granulated sugar
- 16 ounces cream cheese
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg
- 2 egg yolks
- 1/2 cup sour cream
- 1 pinch salt
- 1/3 cup superfine sugar
Instructions
- Preheat oven to 275°F (135°C). Line a muffin tin with cupcake liners.
- Crush 9 graham crackers, and place in a small bowl. Stir in 6 tablespoons melted butter and 1/4 cup granulated sugar until evenly combined. Divide mixture evenly among cupcake liners and press firmly into the bottoms to form the crust.
- In a large bowl, beat 16 ounces cream cheese and 1/2 cup granulated sugar until smooth and creamy. Add 1 teaspoon vanilla extract, 1 egg, 2 egg yolks, 1/2 cup sour cream, and 1 pinch salt. Beat until fully combined and smooth, scraping down the sides as needed.
- Spoon cheesecake batter into liners, filling each about ¾ full.
- Bake for 22–25 minutes, or until centers are set but still slightly jiggly.
- Remove from oven and allow cupcakes to cool completely in the pan. Refrigerate for at least 2 hours before removing liners.
- Once chilled, remove cupcake liners. Sprinkle about 1 teaspoon superfine sugar evenly over the top of each cheesecake.
- Use a kitchen torch to caramelize the sugar until golden and glassy. Alternatively, place cheesecakes on a baking sheet under the oven broiler, watching closely and rotating as needed until sugar is caramelized.
- Serve chilled.
