Description

A delicious and crispy dish made with grated zucchini and corn, perfect for a snack or appetizer.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels, fresh or frozen
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much excess moisture as possible to help the fritters turn out crispy.
  2. In a large mixing bowl, combine the grated zucchini, corn kernels, all-purpose flour, cornmeal, eggs, chopped green onions, fresh parsley, baking powder, garlic powder, salt, and black pepper.
  3. Mix until everything is well combined and a thick fritter batter forms.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  5. Once the oil is hot, drop spoonfuls of the zucchini corn mixture into the skillet.
  6. Gently flatten each fritter with the back of a spoon.
  7. Fry for 3–4 minutes per side, or until the fritters are golden brown and crispy.
  8. Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
  9. Serve warm with sour cream, ranch dressing, garlic aioli, or your favorite dipping sauce.

  • For the crispiest fritters, make sure to squeeze the zucchini very well before mixing.
