A delicious and crispy dish made with grated zucchini and corn, perfect for a snack or appetizer.

- 2 medium zucchinis, grated
- 1 cup corn kernels, fresh or frozen
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 2 large eggs
- 1/4 cup green onions, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- Vegetable oil, for frying
Instructions
- Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much excess moisture as possible to help the fritters turn out crispy.
- In a large mixing bowl, combine the grated zucchini, corn kernels, all-purpose flour, cornmeal, eggs, chopped green onions, fresh parsley, baking powder, garlic powder, salt, and black pepper.
- Mix until everything is well combined and a thick fritter batter forms.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the zucchini corn mixture into the skillet.
- Gently flatten each fritter with the back of a spoon.
- Fry for 3–4 minutes per side, or until the fritters are golden brown and crispy.
- Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil.
- Serve warm with sour cream, ranch dressing, garlic aioli, or your favorite dipping sauce.
Notes
- For the crispiest fritters, make sure to squeeze the zucchini very well before mixing.
