Description

A hearty and delicious soup made with Italian sausage, cheese tortellini, and fresh spinach, cooked to perfection in a crockpot.


Ingredients

  • 1 pound Ground Italian Sausage
  • ½ onion (finely diced)
  • 2 carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 1 tablespoon minced garlic
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 can crushed tomatoes (28 oz can)
  • 4 cups chicken broth
  • 16 oz cheese tortellini
  • 2 cups fresh spinach (packed and chopped)
  • 2 cups Heavy whipping cream
  • 2 tablespoons cornstarch

Instructions

  1. Brown 1 pound ground Italian sausage in a large skillet over medium heat. Drain any excess grease and allow the sausage to cool slightly.
  2. Place the browned sausage, ½ finely diced onion, 2 peeled and diced carrots, 2 diced celery stalks, 1 tablespoon minced garlic, 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon Italian seasoning, 1 can crushed tomatoes, and 4 cups chicken broth into a crock pot.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. In a small bowl, whisk together 2 cups heavy whipping cream and 2 tablespoons cornstarch until smooth.
  5. Stir the cream mixture, 16 ounces cheese tortellini, and 2 cups chopped fresh spinach into the crock pot.
  6. Cover and cook on high for 20-30 minutes until the tortellini is tender and the soup has thickened.
  7. Serve warm and enjoy!

Notes

  • This soup can be easily customized with different vegetables.
  • For a lighter version, substitute heavy cream with half-and-half.
  • Stir in some grated Parmesan cheese for extra flavor.
