Description

A hearty and cheesy taco casserole made in a slow cooker, featuring ground beef, potatoes, and a cheesy topping.

Ingredients

Scale
  • 1.5 lbs ground beef
  • 1 small onion, diced
  • 1 tablespoon minced garlic
  • 2 packets taco seasoning, divided
  • 1/3 cup water
  • 32 oz frozen diced potatoes
  • 1 can cream of chicken soup (or any cream-style soup you prefer)
  • 1 cup salsa
  • 2 cups shredded cheese (sharp cheddar + pepper jack recommended)
  • 2 additional cups shredded cheese, for topping

Instructions

  1. Cook the Beef Base: In a large skillet, sauté the ground beef with the diced onion and minced garlic until the meat is fully browned. Drain excess grease if needed. Add 1 packet of taco seasoning plus 1/3 cup water, stir well, and let it simmer briefly to coat the meat.
  2. Build the Casserole in the Crockpot: Pour the cooked beef mixture into your slow cooker. Add the frozen potatoes, second packet of taco seasoning, cream soup, salsa, and 2 cups of shredded cheese. Stir everything together until combined.
  3. Add the Cheese Layer: Sprinkle the remaining 2 cups of cheese evenly over the top.
  4. Slow Cook: Cook on LOW for 3–4 hours or HIGH for 2–3 hours. It’s ready when the potatoes are tender all the way through. (Exact time varies by slow-cooker model.)
  5. Serve: Spoon into bowls and top with anything you love: sour cream, green onions, jalapeños, cilantro, tortilla chips, etc. Enjoy a warm, cheesy, taco-inspired comfort meal!
