- 2/3 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 1/2 cup coarse sanding sugar
- 1/2 cup pastel candy-coated chocolate pieces
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
- Cream the butter and granulated sugar until light and fluffy.
- Mix in the egg yolks and vanilla extract until fully combined.
- Add the flour and mix just until a soft dough forms. Do not overmix.
- Scoop teaspoon-sized portions of dough and roll into balls.
- Roll each ball in coarse sanding sugar to coat completely.
- Place on the prepared baking sheet and gently press a candy piece into the center of each cookie.
- Bake for 8 to 10 minutes until the bottoms are lightly golden and the tops are set.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
