Description
A festive and crunchy Easter snack mix made with puff corn, mini pretzels, and a delicious caramel coating, topped with white chocolate and colorful candies.

- 3 cups puff corn, or Corn Pops cereal
- 1 cup mini pretzels
- ¼ cup unsalted butter
- ½ cup packed light brown sugar
- 2 Tbsp light corn syrup
- ¼ tsp salt
- ¼ tsp baking soda
- ½ tsp vanilla extract
- ½ cup white chocolate chips, almond bark, or candy melts
- ¾ cup pastel spring M&M’s
- 2–3 Tbsp Easter sprinkles
Instructions
- Preheat oven to 250°F. Line a large baking sheet with parchment paper.
- Place the corn puffs and mini pretzels in a large mixing bowl and set aside.
- In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a gentle boil and cook for 3–4 minutes, stirring constantly.
- Remove from heat and immediately stir in the baking soda and vanilla extract. The mixture will foam slightly.
- Quickly pour the caramel over the cereal and pretzels. Gently stir until everything is evenly coated.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake for 30 minutes, stirring once halfway through baking.
- Remove from the oven and allow the snack mix to cool completely.
- Once cooled, melt the white chocolate or almond bark in the microwave in 20-second intervals, stirring between each until smooth.
- Drizzle the melted chocolate over the snack mix. Immediately sprinkle with the pastel M&M’s and Easter sprinkles.
- Allow the chocolate to set for about 20 minutes, then break the mix into pieces and serve.
Notes
- Store any leftovers in an airtight container for up to a week.
- You can substitute with other types of candy or toppings as desired.
