Description

A fun and tasty treat, these Easy Easter Funfetti Cake Pops combine a delightful cake mix with colorful sprinkles to create a perfect festive dessert for Easter celebrations.

Ingredients

Scale
  • 1 package white cake mix
  • 1/2 cup rainbow jimmies for the cake batter
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large whole eggs
  • 2 tablespoons canned frosting (white, vanilla, or cream cheese)
  • 40 ounces vanilla melting chocolate or almond bark (divided)
  • Pastel colored food coloring gels (yellow, pink, purple, green, and blue)
  • Easter sprinkles

Instructions

  1. Prepare the white cake mix according to package directions using water, oil, and eggs. Fold in rainbow jimmies before pouring batter into a pan.
  2. Bake as directed and allow the cake to cool completely on a wire rack.
  3. Crumble the cooled cake into a large mixing bowl until fine and uniform.
  4. Add two tablespoons of frosting to the cake crumbs and mix until combined.
  5. Roll the mixture into uniform 1-inch balls and place onto a parchment-lined baking sheet.
  6. Dip the tip of each lollipop stick into melted chocolate and insert it into the cake balls to secure.
  7. Chill the cake pops in the refrigerator for at least one hour.
  8. Melt the remaining candy melts and divide into bowls for different colors of pastel food coloring.
  9. Dip each chilled cake pop into the melted candy until fully coated, then add sprinkles before it sets.
  10. Place finished cake pops in a cake pop stand or Styrofoam to dry completely.

Notes

  • Ensure the cake is completely cool before crumbling to avoid a soggy texture.
  • Use a small cookie scoop for uniform cake ball sizes.
  • Let the coating harden before drizzling additional colors.
