- 6 to 7 medium fresh peaches, washed and sliced (no peeling necessary)
- 1/3 cup granulated sugar (65 g)
- 1 teaspoon ground cinnamon
- 1 tablespoon fresh lemon juice
- 1/2 cup all-purpose flour (65 g)
- 1 cup old-fashioned rolled oats (90 g)
- 1/3 cup sliced almonds, lightly toasted (35 g)
- 1/3 cup packed brown sugar (70 g)
- 6 tablespoons cold unsalted butter, cut into small pieces (85 g)
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and slice 6 to 7 medium peaches (about 4 cups/600 g sliced). No need to peel! Toss the slices in a medium bowl with 1/3 cup granulated sugar, 1 teaspoon ground cinnamon, and 1 tablespoon fresh lemon juice. Stir gently to coat evenly. Set aside to macerate.
- In another bowl, combine 1 cup old-fashioned rolled oats, 1/3 cup sliced almonds, 1/2 cup all-purpose flour, 1/3 cup packed brown sugar, and a pinch of salt. Mix well.
- Add 6 tablespoons cold unsalted butter cut into small pieces. Using a pastry cutter, fork, or fingers, quickly work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized bits.
- Transfer the peach mixture (with juices) into a greased 8×8-inch baking dish. Spread evenly.
- Sprinkle the streusel topping over the peaches, covering them generously but not packing it down.
- Bake for 35-40 minutes, until the topping is golden brown and the peach juices are bubbling around the edges.
- Let the crisp rest for 10-15 minutes before serving to allow the juices to thicken.
Notes
- For added flavor, try adding a pinch of nutmeg to the peach mixture.
- This dish can be served warm or at room temperature.
