Description

Fritos Corn Salad is a crunchy and flavorful dish perfect for gatherings and picnics.


Ingredients

  • 2 cans whole kernel corn, drained, 15 oz. each
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • ½ small red onion, chopped (about 1/3-cup)
  • 2 cups shredded Mexican or Fiesta blend cheese
  • 1 cup mayonnaise
  • 1 tablespoon taco seasoning mix
  • 2 teaspoon fresh lime juice
  • ¼ teaspoon ground black pepper
  • 1 bag Chili Cheese Fritos corn chips, lightly crushed, 9.25 oz.

Instructions

  1. In a large bowl, combine all of the ingredients except for the corn chips.
  2. Cover and refrigerate until ready to serve, at least two hours.
  3. Just before serving, stir in the crushed corn chips.

  • For best flavor, let the salad chill for at least two hours before serving.
  • You can adjust the amount of taco seasoning according to your taste.
