Description

Deliciously decadent German Chocolate Cookies topped with a sweet frosting and optional chocolate ganache.


Ingredients

  • ¾ cup unsalted butter, softened (1 1/2 sticks)
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • one 3.9-ounce package instant chocolate pudding mix, (not sugar-free and not ‘cook & serve’)
  • ¼ cup unsweetened natural cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt, or to taste
  • 1 cup semi-sweet chocolate chips
  • 1 cup evaporated milk (for frosting)
  • 1 cup granulated sugar (for frosting)
  • 3 egg yolks from large eggs (for frosting)
  • ½ cup unsalted butter, softened (for frosting)
  • 1 ½ cups sweetened shredded coconut, toasted if desired (for frosting)
  • 1 ¼ cups chopped pecans, salted or unsalted (for frosting)
  • 1 teaspoon vanilla (for frosting)
  • ½ cup semi-sweet chocolate chips (for ganache)
  • 1 teaspoon heavy cream (for ganache)

Instructions

  1. In a stand mixer, combine butter, sugars, and eggs; beat on medium-high until creamed, about 4 minutes.
  2. Add vanilla and mix for 30 seconds.
  3. Add pudding mix and cocoa powder; mix on low until combined, about 1 minute.
  4. Add flour, baking soda, and salt; mix on low until combined, about 1 minute.
  5. Add chocolate chips; mix on low until just combined, about 30 seconds.
  6. Use a medium cookie scoop to form 2-3 tablespoon dough balls; place on a tray and refrigerate for at least 2 hours.
  7. Preheat oven to 350°F and line baking sheets.
  8. Place 8-10 dough balls on each sheet and bake for 10 minutes or until edges are set.
  9. Let cookies cool on baking sheet while making frosting.
  10. For frosting, combine evaporated milk, sugar, egg yolks, and butter in a saucepan over medium heat until it boils and coats the back of a spoon, about 10 minutes.
  11. Add coconut, pecans, and vanilla; stir to combine and spread over cooled cookies.
  12. For optional ganache, melt chocolate chips and cream in the microwave in bursts, then drizzle over cookies.

Notes

  • Refrigerate the cookie dough to prevent thin, flat cookies.
  • Use fresh evaporated milk, not sweetened condensed milk.
  • Toast coconut for added flavor, but watch carefully as it burns quickly.
  • Ensure cookies are cooled before applying warm frosting.
