Description
Deliciously decadent German Chocolate Cookies topped with a sweet frosting and optional chocolate ganache.
Ingredients

- ¾ cup unsalted butter, softened (1 1/2 sticks)
- ¾ cup light brown sugar, packed
- ¼ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- one 3.9-ounce package instant chocolate pudding mix, (not sugar-free and not ‘cook & serve’)
- ¼ cup unsweetened natural cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt, or to taste
- 1 cup semi-sweet chocolate chips
- 1 cup evaporated milk (for frosting)
- 1 cup granulated sugar (for frosting)
- 3 egg yolks from large eggs (for frosting)
- ½ cup unsalted butter, softened (for frosting)
- 1 ½ cups sweetened shredded coconut, toasted if desired (for frosting)
- 1 ¼ cups chopped pecans, salted or unsalted (for frosting)
- 1 teaspoon vanilla (for frosting)
- ½ cup semi-sweet chocolate chips (for ganache)
- 1 teaspoon heavy cream (for ganache)
Instructions
- In a stand mixer, combine butter, sugars, and eggs; beat on medium-high until creamed, about 4 minutes.
- Add vanilla and mix for 30 seconds.
- Add pudding mix and cocoa powder; mix on low until combined, about 1 minute.
- Add flour, baking soda, and salt; mix on low until combined, about 1 minute.
- Add chocolate chips; mix on low until just combined, about 30 seconds.
- Use a medium cookie scoop to form 2-3 tablespoon dough balls; place on a tray and refrigerate for at least 2 hours.
- Preheat oven to 350°F and line baking sheets.
- Place 8-10 dough balls on each sheet and bake for 10 minutes or until edges are set.
- Let cookies cool on baking sheet while making frosting.
- For frosting, combine evaporated milk, sugar, egg yolks, and butter in a saucepan over medium heat until it boils and coats the back of a spoon, about 10 minutes.
- Add coconut, pecans, and vanilla; stir to combine and spread over cooled cookies.
- For optional ganache, melt chocolate chips and cream in the microwave in bursts, then drizzle over cookies.
Notes
- Refrigerate the cookie dough to prevent thin, flat cookies.
- Use fresh evaporated milk, not sweetened condensed milk.
- Toast coconut for added flavor, but watch carefully as it burns quickly.
- Ensure cookies are cooled before applying warm frosting.
