Description

Gooey Butter Pecan Cream Cheese Cake is a rich and indulgent dessert featuring a soft buttery cake base topped with a creamy pecan and cream cheese mixture, finished with warm caramel and pecan halves.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt
  • 8 oz cream cheese, softened
  • ½ cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ¾ cup chopped pecans
  • ¾ cup caramel sauce (warm)
  • 2 tbsp sweetened condensed milk (optional but recommended for extra richness)
  • ½ cup pecan halves

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth, then mix in the eggs, milk, and vanilla extract.
  3. In a separate bowl, mix the flour, baking powder, and salt, then combine with the wet mixture gently.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. In another bowl, beat the softened cream cheese until smooth, then mix in brown sugar, egg, and vanilla extract, and fold in chopped pecans.
  6. Spoon the cream cheese mixture evenly over the cake batter, keeping the layers separate.
  7. Bake for 35–40 minutes until the edges are set and golden, but the center remains gooey.
  8. While warm, poke holes in the cake and pour the caramel mixture over the surface.
  9. Scatter pecan halves on top while caramel is warm.
  10. Let the cake rest for 20–30 minutes before slicing.

Notes

  • For easier removal, line the baking pan with parchment paper.
  • Ensure not to overmix the batter to keep it light.
  • This cake is intentionally gooey; avoid overbaking.
  • The caramel soak is crucial for flavor and moisture.
