Description
Delicious and flavorful Greek Chicken Kabobs marinated in a yogurt-based marinade.
Ingredients

- ½ cup plain Greek yogurt (0% fat, 2% fat or 5% fat)
- 3 or 4 cloves garlic, peeled and grated
- 1–2 tablespoons extra virgin olive oil
- 1 tablespoon honey
- Half of 1 lemon, juiced (about 1 1/2–2 tablespoons)
- 1 ½ teaspoons dried oregano
- 1 teaspoon paprika (smoked paprika may be substituted)
- 1 teaspoon salt (or to taste)
- 1 teaspoon freshly ground black pepper (or to taste)
- ½ teaspoon dried rosemary (or more to taste)
- 1 1/2–2 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
- tzatziki sauce, for serving (optional)
- fresh herbs (dill, parsley, mint) for garnishing (optional)
Instructions
- In a large bowl, add the Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary. Whisk to combine the marinade.
- Add the diced chicken to the marinade, toss well, cover with foil or plastic wrap, and refrigerate for 30-60 minutes, up to 8 hours.
- If using wooden skewers, soak them in water for at least 30 minutes.
- After marinating, thread the chicken onto skewers without compressing the pieces.
- Grill, cook in a grill pan, or bake in the oven until chicken reaches 160F and rests to 165F. Follow specific cooking methods:
- Grilling: Preheat outdoor gas grill to medium-high heat. Grill skewers for approximately 3-4 minutes per side.
- Grill Pan: Preheat a grill pan over medium-high heat. Cook for about 5 minutes per side.
- Oven Baking: Preheat oven to 400F and arrange skewers on a grill rack over a parchment-lined baking sheet. Bake for 20-25 minutes.
- Garnish with fresh herbs if desired. Serve with tzatziki sauce or as preferred.
Notes
- Marinating chicken longer enhances flavor and juiciness.
- If skewers stick while flipping, let them cook for another minute before trying again.
