Description

Delicious and flavorful Greek Chicken Kabobs marinated in a yogurt-based marinade.


Ingredients

  • ½ cup plain Greek yogurt (0% fat, 2% fat or 5% fat)
  • 3 or 4 cloves garlic, peeled and grated
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Half of 1 lemon, juiced (about 1 1/22 tablespoons)
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon paprika (smoked paprika may be substituted)
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon freshly ground black pepper (or to taste)
  • ½ teaspoon dried rosemary (or more to taste)
  • 1 1/22 pounds boneless skinless chicken breasts, diced into 1 1/2-inch chunks
  • tzatziki sauce, for serving (optional)
  • fresh herbs (dill, parsley, mint) for garnishing (optional)

Instructions

  1. In a large bowl, add the Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary. Whisk to combine the marinade.
  2. Add the diced chicken to the marinade, toss well, cover with foil or plastic wrap, and refrigerate for 30-60 minutes, up to 8 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. After marinating, thread the chicken onto skewers without compressing the pieces.
  5. Grill, cook in a grill pan, or bake in the oven until chicken reaches 160F and rests to 165F. Follow specific cooking methods:
  6. Grilling: Preheat outdoor gas grill to medium-high heat. Grill skewers for approximately 3-4 minutes per side.
  7. Grill Pan: Preheat a grill pan over medium-high heat. Cook for about 5 minutes per side.
  8. Oven Baking: Preheat oven to 400F and arrange skewers on a grill rack over a parchment-lined baking sheet. Bake for 20-25 minutes.
  9. Garnish with fresh herbs if desired. Serve with tzatziki sauce or as preferred.

  • Marinating chicken longer enhances flavor and juiciness.
  • If skewers stick while flipping, let them cook for another minute before trying again.
