Description

A refreshing and unique twist on a classic Caprese salad featuring grilled watermelon, fresh mozzarella, and a drizzle of balsamic reduction.


Ingredients

  • 2 (1-inch) slices of seedless watermelon
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons hot honey or regular (plus extra for drizzling)
  • 4 ounces fresh mozzarella pearls cheese balls
  • 1 cup grape tomatoes halved
  • ¼ cup fresh basil leaves torn or chiffonade
  • 2 to 3 tablespoons balsamic reduction or balsamic glaze

Instructions

  1. Preheat grill to medium-high heat. Slice the watermelon into rounds about 1-inch thick, keeping the rind on. Cut each round into 4 wedges.
  2. In a small bowl, whisk together olive oil, salt, pepper, and honey. Brush both sides of the watermelon wedges with the mixture.
  3. Grill watermelon for 2 to 3 minutes per side, just until grill marks appear and the watermelon is lightly caramelized. Remove from grill and let cool.
  4. Arrange grilled watermelon wedges on a serving platter. Top with mozzarella pearls, grape tomatoes, and fresh basil. Drizzle with extra honey and balsamic reduction before serving.

Notes

  • For a spicier kick, use hot honey.
  • Make sure not to overcook the watermelon to retain its juicy texture.
