Description

A tropical delight featuring grilled chicken marinated in mango-pineapple salsa and served with bell peppers, diced mango, and pineapple.


Ingredients

  • 1 ½ pounds thin-sliced boneless skinless chicken breasts (4 breasts)
  • 8 ounces Island Salsa or favorite mango-pineapple salsa
  • ⅓ cup lime juice
  • ¼ cup olive oil
  • ½ teaspoon freshly ground black pepper or to taste
  • 1 large yellow bell pepper, sliced into 1/2-inch wide strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt or to taste
  • ½ teaspoon freshly ground black pepper or to taste
  • 4 ounces Island Salsa or as desired for garnishing
  • ½ cup diced mango (thawed and drained if using frozen)
  • ⅓ cup pineapple tidbits (thawed and drained if using frozen)
  • 2 to 4 tablespoons fresh cilantro (optional for garnishing)

Instructions

  1. Add the chicken, salsa, lime juice, olive oil, and black pepper to a large ziptop plastic bag, seal it, and smoosh around to evenly coat the chicken. Marinate in the fridge for at least 30 minutes or overnight.
  2. Lightly oil the grill grates and preheat the grill to medium-high heat.
  3. Add the sliced peppers to a grill basket, drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Place the chicken on one side of the grill and the grill basket of peppers on the other side. Discard the marinade bag.
  5. Grill the chicken for about 4 to 5 minutes on the first side with the lid closed, flip, and cook for another 4 to 5 minutes on the second side or until cooked through.
  6. While the chicken cooks, intermittently stir the peppers with tongs and cook until desired doneness.
  7. Place the grilled chicken on a serving platter, top each breast with additional salsa, evenly distribute the mango and pineapple, sprinkle with cilantro if desired, and serve immediately.

Notes

  • For additional flavor, marinate the chicken overnight.
  • Feel free to adjust the amount of salsa and garnishes according to your taste.
  • Ensure the chicken is cooked to an internal temperature of 165°F (75°C).
