Description

A delicious grilled dish featuring turkey sausage and colorful vegetables, perfect for summer barbecues.


Ingredients

  • 14 ounces turkey sausage, cut into ½ inch thick slices
  • 1 large red bell pepper, seeded and diced into 1-inch pieces
  • 1 large yellow bell pepper, seeded and diced into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 1 tablespoon fresh parsley, finely minced
  • 12 tablespoons olive oil
  • 1 teaspoon paprika, or smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground pepper
  • ⅓ cup barbecue sauce
  • Fresh herbs, optional for garnishing

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  2. Preheat your outdoor grill to medium or medium-high heat, lightly oiling the grill grates if needed. Alternatively, preheat an indoor grill pan over high heat.
  3. In a large mixing bowl, combine the sausage, peppers, onions, 1 tablespoon parsley, and drizzle with olive oil. Toss to coat evenly.
  4. Season the mixture with paprika, garlic powder, onion powder, salt, and pepper, tossing to combine.
  5. Assemble the skewers by alternating sausage and vegetables, making about 8 skewers total.
  6. Grill the skewers on the grates for 2 minutes, then rotate and baste with barbecue sauce. Cook for an additional 2 minutes.
  7. Repeat rotating, basting, and cooking for a total grilling time of about 8 minutes. For grill pans, it may take 10-12 minutes.
  8. Garnish with fresh herbs as desired before serving.
