- 1 pound ground beef
- 1/2 cup chopped onion
- 2 teaspoons minced garlic
- salt and pepper, to taste
- 24 oz Frozen Hash Brown Potatoes
- 2 cups Sour Cream
- 10.5 oz Cream of Chicken Soup, (1 can)
- ½ cup Butter, melted
- 2 ½ cups Shredded Cheddar Cheese, divided
Instructions
- Preheat oven to 350 degrees F. Prepare a 9×13″ casserole dish with nonstick cooking spray and set aside.
- In a skillet, cook and crumble ground beef over medium heat. Add in onion and garlic and cook until fragrant.
- Drain fat as needed then season ground beef with salt and pepper to taste.
- In a large mixing bowl, place frozen hash brown, sour cream, cream of chicken soup, melted butter, and 1 3/4 cups of shredded cheese. Mix until combined then add in ground beef mixture and mix again until combined.
- Scoop mixed ingredients into the prepared casserole dish and top with remaining cheese.
- Bake for 40-45 minutes or until casserole is warm throughout.
Notes
- You can add vegetables like bell peppers or spinach for an extra nutrient boost.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
