Description

Italian Antipasto Pickled Bites are a delightful mix of cured meats, cheeses, and vegetables, all pickled in a flavorful marinade, perfect as an appetizer.


Ingredients

  • 8 oz hard salami, cut into 1-inch cubes
  • 8 oz pepperoni, cut into bite-sized pieces
  • 8 oz fresh mozzarella pearls (or cubed mozzarella)
  • 1 cup pitted black olives
  • 1 cup green olives
  • 1 cup pepperoncini peppers
  • 1 red bell pepper, cut into 1-inch pieces
  • ½ red onion, cut into chunks
  • 3 cloves garlic, smashed
  • 2 tsp Italian seasoning
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • ½ tsp whole black peppercorns
  • ¼ cup chopped fresh parsley
  • 1 cup olive oil (for marinade)
  • ¾ cup red wine vinegar (for marinade)
  • ¼ cup white wine vinegar (for marinade)
  • 2 tbsp Italian dressing seasoning mix (for marinade)
  • 1 tbsp Dijon mustard (for marinade)
  • 1 tsp honey (for marinade)
  • 1 tsp kosher salt (for marinade)
  • ½ tsp black pepper (for marinade)

Instructions

  1. In a large bowl, combine the salami, pepperoni, mozzarella, olives, pepperoncini, bell pepper, onion, garlic, parsley, Italian seasoning, oregano, and red pepper flakes.
  2. In a separate bowl or measuring cup, whisk together the olive oil, both vinegars, Italian dressing seasoning, Dijon mustard, honey, salt, and black pepper until well combined.
  3. Transfer the antipasto mixture into a large glass jar or airtight container.
  4. Pour the marinade over the mixture, making sure everything is well coated.
  5. Seal and refrigerate for at least 24 hours, gently shaking the jar once or twice during that time.
  6. Serve chilled with toothpicks as an appetizer, alongside crackers, toasted baguette slices, or on a charcuterie board.

Notes

  • Best flavor develops after 24–48 hours.
  • Keeps refrigerated for up to 5 days.
