Description

A delicious keto friendly donut coated in cinnamon sugar, perfect for guilt-free indulgence.


Ingredients

  • 2 cups fine ground almond flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • ¼ cup oil (coconut or avocado)
  • ¼ cup sugar-free sweetener
  • 3 large eggs (room temperature)
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar free sweetener (raw cane sugar substitute)
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (180°C). Grease 2 donut pans; set aside.
  2. In a large mixing bowl, whisk almond flour, salt, and baking soda.
  3. Add oil, sweetener, eggs, cinnamon, and vanilla extract and mix until well combined.
  4. Spoon or pipe batter into your mini donut pan, careful not to cover the center.
  5. Bake for 10-12 minutes or until the center is set.
  6. Remove from the oven and let cool for 5 minutes.
  7. In a small mixing bowl, combine remaining sweetener and cinnamon.
  8. Dip the tops of each donut into the cinnamon sugar mixture. Flip the donut over and coat the bottom.
  9. Store in an airtight container at room temperature for up to 2 days.
