Lean Ground Turkey Zucchini Boats are a healthy and delicious meal option featuring turkey and marinara stuffed into zucchini, topped with Parmesan cheese.

- 4 zucchini (halved lengthwise and scooped out)
- 1/4 cup parmesan (preferably Kraft Grated Parmesan)
- 3/4 onion, finely diced
- 1 lb ground turkey
- 1 3/4 cups marinara (preferably Rao’s Homemade)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
Instructions
- Preheat your oven to 400°F. While it heats, wash the zucchini and cut each one in half lengthwise. Using a spoon or small melon baller, scoop out the centers, leaving about 1/4 inch of flesh to create sturdy boats. Arrange the hollowed zucchini halves cut-side up in a baking dish.
- Heat a large skillet over medium-high heat. Add ground turkey and diced onion. Cook for 8-10 minutes, breaking the turkey into small crumbles, until the turkey is cooked through and the onion is softened.
- Sprinkle garlic powder and dried oregano over the turkey mixture and stir to combine. Pour in marinara sauce and simmer for 2-3 minutes.
- Spoon the turkey-marinara mixture into each zucchini boat, filling them evenly. Sprinkle Parmesan cheese over the top of each boat.
- Cover the baking dish with foil and place in the oven. Bake for 20-30 minutes until the zucchini is fork-tender. Remove foil for the last 2-3 minutes for browning if desired.
Notes
- Letting the turkey sit undisturbed in the skillet for a minute can enhance depth of flavor.
- Adjust seasonings to taste during the simmering step.
