Description

A delightful layered dessert combining creamy lemon cheesecake and sweet blueberry filling over a graham cracker crust.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 box (3.4 oz) instant lemon pudding mix
  • 1 cup cold milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 cups whipped topping, divided
  • 1 can (21 oz) blueberry pie filling
  • Extra whipped topping for decorating
  • Fresh blueberries
  • Thin lemon slices or lemon zest curls
  • Powdered sugar for dusting

Instructions

  1. Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of a 9×9-inch baking dish and refrigerate.
  2. Make the Lemon Pudding: In a separate bowl, whisk together the instant lemon pudding mix and cold milk for about 2 minutes until thickened. Set aside.
  3. Prepare the Lemon Cheesecake Filling: Beat the softened cream cheese and powdered sugar until smooth. Add the lemon pudding mixture, lemon juice, vanilla extract, and lemon zest, mixing until silky. Gently fold in 1 1/2 cups whipped topping.
  4. Assemble the Layers: Spread half of the lemon cheesecake filling over the crust, top with blueberry pie filling, then add the remaining cheesecake filling and smooth the top.
  5. Chill the Dessert: Cover and refrigerate for at least 6 hours, preferably overnight, until fully set.
  6. Decorate and Serve: Pipe or spread whipped topping over the dessert, garnish with blueberries, lemon slices, and dust with powdered sugar. Slice and serve chilled.
