A refreshing salad made with cucumbers, garlic, lemon juice, and dill, perfect for summer.
Ingredients

- 2 Cucumbers (Hot House or English Cucumbers)
- 2 Tablespoons Fresh Minced Garlic (about 2 cloves)
- 3 Tablespoons Lemon Juice
- 3 Tablespoons Extra Virgin Olive Oil
- 3 Teaspoons Dried Dill Weed (or about 3 Tablespoons of Fresh Dill Weed)
- 2 Teaspoons Salt
- 1 Teaspoon Ground Black Pepper
Instructions
- First you will need a Bowl with a Lid. Then Cut the Cucumbers in half long way and then cut into about 1/2 inch Chunks. We like them Chunky so the Marinade doesn’t make the Cucumbers Soggy.
- Next, Add Fresh Minced Garlic, Lemon Juice, Extra Virgin Olive Oil, Dried Dill Weed, Salt and Ground Black Pepper to the Bowl of Cucumbers.
- Now, Mix up all the Ingredients really well, Making Sure all the Cucumbers are Coated with the Marinade.
- Put the Lid on the Bowl and Let Marinate in the Refrigerator for 1 Hour, This allows all the Ingredients to soak in the Cucumbers.

- Can be served as a side dish or light meal.
- Best served chilled.
