Description

A refreshing salad made with cucumbers, garlic, lemon juice, and dill, perfect for summer.


Ingredients

Scale
  • 2 Cucumbers (Hot House or English Cucumbers)
  • 2 Tablespoons Fresh Minced Garlic (about 2 cloves)
  • 3 Tablespoons Lemon Juice
  • 3 Tablespoons Extra Virgin Olive Oil
  • 3 Teaspoons Dried Dill Weed (or about 3 Tablespoons of Fresh Dill Weed)
  • 2 Teaspoons Salt
  • 1 Teaspoon Ground Black Pepper

Instructions

  1. First you will need a Bowl with a Lid. Then Cut the Cucumbers in half long way and then cut into about 1/2 inch Chunks. We like them Chunky so the Marinade doesn’t make the Cucumbers Soggy.
  2. Next, Add Fresh Minced Garlic, Lemon Juice, Extra Virgin Olive Oil, Dried Dill Weed, Salt and Ground Black Pepper to the Bowl of Cucumbers.
  3. Now, Mix up all the Ingredients really well, Making Sure all the Cucumbers are Coated with the Marinade.
  4. Put the Lid on the Bowl and Let Marinate in the Refrigerator for 1 Hour, This allows all the Ingredients to soak in the Cucumbers.

  • Can be served as a side dish or light meal.
  • Best served chilled.
