Description
A delicious and creamy loaded cauliflower casserole topped with cheese and bacon bits.

- 1 head cauliflower steamed or 6 cups Steamed Cauliflower Rice
- 1 cup shredded cheddar cheese divided
- 1/2 cup sour cream
- 2 teaspoons dry ranch seasoning
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 4 tablespoons real bacon bits divided
- 1/4 cup whole whipping cream OPTIONAL
Instructions
- Preheat oven to 350°F (175°C).
- Steam the cauliflower head until tender and easily pierced with a fork. Mash the cauliflower in a large mixing bowl and season with salt and pepper.
- If using cauliflower rice, steam approximately 6 cups of it.
- Set aside 1 tablespoon of shredded cheddar cheese, then mix the remaining cheese, sour cream, ranch seasoning, onion powder, garlic powder, and 3 tablespoons of bacon bits into the cauliflower.
- If using, add the whole whipping cream at this stage and mix well.
- Transfer the mixture to a small baking dish and heat for 35 minutes until hot.
- Remove from the oven and sprinkle with remaining cheddar cheese and 1 tablespoon bacon bits.
- Serve immediately while hot and melty.
Notes
- For a creamier texture, beat the cauliflower mixture with a hand mixer.
- Adjust seasoning to taste according to preference.
- Can be prepared ahead of time and reheated.
