Description

A delicious and creamy loaded cauliflower casserole topped with cheese and bacon bits.


Ingredients

  • 1 head cauliflower steamed or 6 cups Steamed Cauliflower Rice
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup sour cream
  • 2 teaspoons dry ranch seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 tablespoons real bacon bits divided
  • 1/4 cup whole whipping cream OPTIONAL

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Steam the cauliflower head until tender and easily pierced with a fork. Mash the cauliflower in a large mixing bowl and season with salt and pepper.
  3. If using cauliflower rice, steam approximately 6 cups of it.
  4. Set aside 1 tablespoon of shredded cheddar cheese, then mix the remaining cheese, sour cream, ranch seasoning, onion powder, garlic powder, and 3 tablespoons of bacon bits into the cauliflower.
  5. If using, add the whole whipping cream at this stage and mix well.
  6. Transfer the mixture to a small baking dish and heat for 35 minutes until hot.
  7. Remove from the oven and sprinkle with remaining cheddar cheese and 1 tablespoon bacon bits.
  8. Serve immediately while hot and melty.

Notes

  • For a creamier texture, beat the cauliflower mixture with a hand mixer.
  • Adjust seasoning to taste according to preference.
  • Can be prepared ahead of time and reheated.
