Ingredients

  • 1/4 cup brown sugar
  • 1/2 tablespoon water
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 baguette
  • olive oil
  • salt and pepper
  • 8 oz log of goat cheese
  • maple syrup, honey, or hot honey

Instructions

  1. Preheat the oven to 350°F. Line a rimmed baking sheet with foil and set an oven-safe rack on top.
  2. Mix the brown sugar, water, black pepper, and cayenne in a small bowl.
  3. Lay the bacon on the rack in a single layer. Coat both sides with the sugar mixture and press it in so it sticks. Sprinkle with red pepper flakes if using.
  4. Bake for 15 minutes. Flip the bacon and bake another 10 to 15 minutes until crispy. Transfer to a paper towel-lined plate and let cool.
  5. Increase the oven temperature to 425°F.
  6. Slice the baguette into 1/2-inch pieces and arrange on a foil-lined baking sheet. Brush lightly with olive oil and season with salt and pepper. Bake for 7 to 10 minutes until golden. Let cool.
  7. Place the goat cheese log on a serving dish. Break the cooled bacon into pieces and press them into the log. Arrange extra bacon pieces around the base.
