Ingredients

- 12 oz pack of thick-cut bacon
- 1/4 cup brown sugar
- 1/2 tablespoon water
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 baguette
- olive oil
- salt and pepper
- 8 oz log of goat cheese
- maple syrup, honey, or hot honey
Instructions
- Preheat the oven to 350°F. Line a rimmed baking sheet with foil and set an oven-safe rack on top.
- Mix the brown sugar, water, black pepper, and cayenne in a small bowl.
- Lay the bacon on the rack in a single layer. Coat both sides with the sugar mixture and press it in so it sticks. Sprinkle with red pepper flakes if using.
- Bake for 15 minutes. Flip the bacon and bake another 10 to 15 minutes until crispy. Transfer to a paper towel-lined plate and let cool.
- Increase the oven temperature to 425°F.
- Slice the baguette into 1/2-inch pieces and arrange on a foil-lined baking sheet. Brush lightly with olive oil and season with salt and pepper. Bake for 7 to 10 minutes until golden. Let cool.
- Place the goat cheese log on a serving dish. Break the cooled bacon into pieces and press them into the log. Arrange extra bacon pieces around the base.
