Description
Mini Zucchini Pizza is a low-carb alternative to traditional pizza that uses zucchini slices as the base, topped with pizza sauce, cheese, and your favorite toppings.
Ingredients
Scale
- 2 to 3 medium zucchinis
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ½ cup pizza sauce or marinara
- ¾ cup shredded mozzarella cheese
- ¼ cup mini pepperoni or chopped regular pepperoni
- ¼ cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper.
- Wash the zucchinis and slice them into uniform ¼-inch thick rounds.
- Lay the zucchini slices on a clean kitchen towel, lightly salting both sides. Allow to sit for 10 minutes and then pat them dry.
- Arrange the zucchini rounds on the baking sheet, brush with olive oil, and season with black pepper and Italian seasoning.
- Roast the zucchini in the preheated oven for 5 to 7 minutes until they begin to soften but are not mushy.
- Remove from the oven and spoon about ½ teaspoon of pizza sauce onto each slice.
- Top each zucchini round with mozzarella cheese, pepperoni, and Parmesan cheese.
- Return to the oven and bake for another 5 to 8 minutes until the cheese is melted, bubbly, and slightly golden.
Notes
- Ensure the zucchini is sliced uniformly to promote even cooking.
- Do not overload the pizzas with sauce to avoid sogginess.
- Feel free to customize toppings based on your preference.
