Description

Mini Zucchini Pizza is a low-carb alternative to traditional pizza that uses zucchini slices as the base, topped with pizza sauce, cheese, and your favorite toppings.


Ingredients

  • 2 to 3 medium zucchinis
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ cup pizza sauce or marinara
  • ¾ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni or chopped regular pepperoni
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
  2. Wash the zucchinis and slice them into uniform ¼-inch thick rounds.
  3. Lay the zucchini slices on a clean kitchen towel, lightly salting both sides. Allow to sit for 10 minutes and then pat them dry.
  4. Arrange the zucchini rounds on the baking sheet, brush with olive oil, and season with black pepper and Italian seasoning.
  5. Roast the zucchini in the preheated oven for 5 to 7 minutes until they begin to soften but are not mushy.
  6. Remove from the oven and spoon about ½ teaspoon of pizza sauce onto each slice.
  7. Top each zucchini round with mozzarella cheese, pepperoni, and Parmesan cheese.
  8. Return to the oven and bake for another 5 to 8 minutes until the cheese is melted, bubbly, and slightly golden.
