Description

Delicious and indulgent Minute Peach Bellini Cupcakes topped with peach buttercream, perfect for any celebration.


Ingredients

  • 1½ tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup champagne or sparkling wine
  • 1/2 cup peach puree
  • 1 cup unsalted butter, softened (for buttercream)
  • 4 cups powdered sugar
  • 1/2 cup peach puree (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • Fresh peach slices (for garnish)
  • Sparkling sugar (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients, alternating with the champagne and peach puree, mixing gently until smooth.
  6. Fill the cupcake liners about two-thirds full.
  7. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cupcakes cool for a few minutes in the pan before transferring them to a cooling rack.
  9. For the buttercream, beat the butter until creamy.
  10. Slowly add the powdered sugar, then mix in the peach puree and vanilla until fluffy and smooth.
  11. Pipe or spread the frosting onto the cooled cupcakes.
  12. Finish with fresh peach slices and a little sparkling sugar on top.

Notes

  • Make sure to use ripe peaches for the best flavor in the puree.
  • Champagne can be substituted with sparkling cider for a non-alcoholic version.
  • These cupcakes are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
