A simple and delicious No-Bake Key Lime Pie with a creamy filling and a crunchy graham cracker crust.

- 1 ½ cups graham cracker crumbs (6.6oz, 187.5g)
- 2 TBSP granulated sugar
- 6 TBSP butter, melted
- 8 oz cream cheese, softened (227g)
- 15 oz sweetened condensed milk (300ml)
- ½ cup key lime juice (4fl.oz, 118ml)
- Whipped cream and lime slices for topping
Instructions
- In a medium mixing bowl, stir together the graham cracker crumbs, granulated sugar and melted butter. The mixture will feel like damp sand and will stick together when pressed. Press the graham cracker mixture up the sides and in the bottom of a 9 inch pie plate. Place in the fridge to chill while we make the filling.
- In a stand mixer, beat the cream cheese on high until smooth, about 2 minutes.
- Add the sweetened condensed milk and the key lime juice and continue beating on medium speed until all the ingredients have mixed in, about 2 minutes.
- Pour the filling into the graham cracker crust. Chill in the fridge for at least 4 hours or up to overnight.
- When you are ready to serve, top the pie with whipped cream and fresh lime slices.
Notes
- For best results, use fresh key lime juice.
- Let the pie set in the refrigerator for a longer time for a more firm consistency.
- Garnish with lime zest for extra flavor.
