Delicious no-bake cookie bites inspired by the classic Samoa cookies, featuring coconut, chocolate, and caramel flavors.

Ingredients

Scale
  • 2 cups of almond flour
  • 1/2 cup of shredded coconut
  • 1/2 cup of maple syrup
  • 1/4 cup of coconut oil
  • 1/4 cup of cocoa powder
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/2 cup of chocolate chips for melting

Instructions

  1. In a large mixing bowl, combine almond flour, shredded coconut, maple syrup, coconut oil, cocoa powder, vanilla extract, and salt.
  2. Mix until the ingredients are well combined and form a dough.
  3. Shape the mixture into bite-sized balls and place them on a lined baking sheet.
  4. Melt the chocolate chips in a microwave or double boiler.
  5. Drizzle the melted chocolate over the cookie bites or dip them completely for a smoother finish.
  6. Refrigerate the bites for about 30 minutes to set before serving.

Notes

  • Feel free to adjust the sweetness by adding more or less maple syrup.
  • You can substitute almond flour with oat flour for a gluten-free option.
