  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine balsamic vinegar, olive oil, honey, minced garlic, dried oregano, salt, and pepper. Whisk together.
  3. Add chicken breasts to the mixture, ensuring they are thoroughly coated. Allow to marinate for at least 15 minutes.
  4. Meanwhile, arrange halved baby potatoes on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  5. Roast potatoes in preheated oven for 15 minutes.
  6. Remove from oven and push potatoes to one side. Place marinated chicken breasts on the empty side of the sheet.
  7. Return to oven and roast for an additional 20 minutes.
  8. After 20 minutes, add green beans to the sheet. Toss them lightly with the chicken and potato juices.
  9. Roast for another 10-15 minutes, until chicken is fully cooked (internal temperature should reach 165°F/75°C) and vegetables are tender.
  10. Take out of the oven and let rest briefly. Garnish with chopped fresh parsley before serving.
