- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 1 pound green beans, trimmed
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine balsamic vinegar, olive oil, honey, minced garlic, dried oregano, salt, and pepper. Whisk together.
- Add chicken breasts to the mixture, ensuring they are thoroughly coated. Allow to marinate for at least 15 minutes.
- Meanwhile, arrange halved baby potatoes on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
- Roast potatoes in preheated oven for 15 minutes.
- Remove from oven and push potatoes to one side. Place marinated chicken breasts on the empty side of the sheet.
- Return to oven and roast for an additional 20 minutes.
- After 20 minutes, add green beans to the sheet. Toss them lightly with the chicken and potato juices.
- Roast for another 10-15 minutes, until chicken is fully cooked (internal temperature should reach 165°F/75°C) and vegetables are tender.
- Take out of the oven and let rest briefly. Garnish with chopped fresh parsley before serving.

- Marinating the chicken for longer will enhance the flavor.
- Feel free to substitute other vegetables like bell peppers or zucchini based on your preference.
