Ingredients
Scale
- 7 slices thick cut bacon slices
- 10 ounces frozen shredded hash browns
- salt and pepper to taste
- 4 eggs
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Take 7 slices thick cut bacon slices and arrange them to line the outer edges of the pan, with one strip down the center, forming two large open squares.
- Spread 10 ounces frozen shredded hash browns inside the two open spaces. Season with salt and pepper. Bake for 18–20 minutes, until bacon is almost crispy.
- Remove tray from the oven and use a spoon to make 4 wells in the hash browns. Crack one egg into each well. Sprinkle 1/2 cup shredded cheddar cheese over the hash browns, if using.
- Return to oven and bake 6–8 minutes, until egg whites are set and bacon is crispy.

- Adjust the cooking time based on your oven and preferred level of crispiness.
