Description

A quick and delicious one-pan breakfast featuring crispy bacon, savory hash browns, and perfectly baked eggs.


Ingredients

  • 7 slices thick cut bacon slices
  • 10 ounces frozen shredded hash browns
  • salt and pepper to taste
  • 4 eggs
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Take 7 slices thick cut bacon slices and arrange them to line the outer edges of the pan, with one strip down the center, forming two large open squares.
  3. Spread 10 ounces frozen shredded hash browns inside the two open spaces. Season with salt and pepper. Bake for 18–20 minutes, until bacon is almost crispy.
  4. Remove tray from the oven and use a spoon to make 4 wells in the hash browns. Crack one egg into each well. Sprinkle 1/2 cup shredded cheddar cheese over the hash browns, if using.
  5. Return to oven and bake 6–8 minutes, until egg whites are set and bacon is crispy.
