Description

A quick and delicious one-pot meal featuring orzo pasta, fresh spinach, and Parmesan cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add orzo pasta and stir to coat with oil.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender and has absorbed most of the liquid.
  7. Stir in chopped spinach and cook for 2-3 minutes until wilted.
  8. Remove from heat, add Parmesan cheese, red pepper flakes (if using), and season with salt and pepper to taste.
  9. Serve warm, garnished with fresh parsley.
