Description

A delightful recipe for Overnight Soft and Fluffy Cinnamon Rolls that can be prepared easily and left to rise overnight for a fresh, warm breakfast treat.


Ingredients

  • up to 4 1/4 cups all-purpose flour, divided
  • ⅓ cup granulated sugar
  • 2 ¼ teaspoons instant dry yeast, one 1/4-ounce packet
  • pinch salt, optional and to taste
  • 6 tablespoons unsalted butter, melted
  • 3 large eggs, lightly whisked
  • ¾ cup buttermilk
  • ½ cup unsalted butter, very soft (for filling)
  • 1 to 1 ¼ cups light brown sugar, packed
  • 3 to 4 teaspoons cinnamon
  • ½ cup unsalted butter, softened (for frosting)
  • 6 ounces cream cheese, softened
  • 1 tablespoon vanilla extract
  • 1 pound confectioners’ sugar (4 cups)
  • ½ teaspoon salt, optional and to taste

Instructions

  1. Combine 4 cups flour, sugar, yeast, and salt in a stand mixer bowl.
  2. Melt the butter and set aside.
  3. Whisk eggs in a separate bowl and warm buttermilk in the microwave.
  4. Add the melted butter, eggs, and buttermilk to the dry ingredients, and mix.
  5. Switch to the dough hook and knead the dough for 10 to 12 minutes.
  6. Place the dough in a greased bowl, cover, and let rise in a warm place for 2 to 2 1/2 hours.
  7. Prepare a baking pan with foil and cooking spray.
  8. Punch down the dough, then roll it into a 16-by-12-inch rectangle.
  9. Spread ½ cup soft butter over the dough, then sprinkle with brown sugar and cinnamon.
  10. Roll the dough tightly into a log and cut into 12 rolls.
  11. Arrange rolls in the prepared pan, cover, and let rise if baking immediately or refrigerate overnight.
  12. Bake at 350ºF for 22 to 25 minutes.
  13. Make cream cheese frosting by beating butter, cream cheese, vanilla, and confectioners’ sugar until smooth.
  14. Frost the cooled rolls and serve.

Notes

  • Make sure buttermilk is warm, not hot, to avoid killing the yeast.
  • Don’t add too much extra flour to the dough; it should be sticky.
  • Place the rolls in the refrigerator for up to 16 hours if making overnight.
  • Adjust frosting consistency with additional sugar if necessary.
