  • 2 lb Patty pan squash (cut into pieces of the same size; you can cut them in half, or into quarters or wedges if they are larger)
  • 2 tbsp Olive oil
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • Optional Flavor Boosters:
  • 2 tsp Italian seasoning
  • 1 tsp Garlic powder
  • 1/2 tsp Crushed red pepper flakes

Instructions

  1. Preheat the oven to 450 degrees F (232 degrees C) for roasted pattypan squash.
  2. Toss the pattypan squash with olive oil, salt, pepper, and any flavor boosters in a large bowl.
  3. Transfer the squash to a baking sheet and arrange, cut side down, in a single layer. Roast for 15-20 minutes until tender and golden brown on the bottom.
  4. For sautéed pattypan squash, heat olive oil in a large skillet over medium-high heat and add the pattypans.
  5. Season with salt, pepper, and any flavor boosters, then sear for 3-5 minutes without moving until golden on the bottom. Flip and repeat.
  6. Preheat the grill, toss the squash with olive oil, season, and grill cut side down for 3-4 minutes. Flip and grill the other side until tender.
  7. For air frying, toss pattypan squash with olive oil, season, then place in the air fryer basket cut side down and air fry at 400 degrees F for 10-12 minutes until crispy and golden.

Notes

  • Work in batches for sautéing and air frying if necessary to ensure even cooking.
  • For best flavor, let sit for a few minutes after cooking before serving.
