Description

Peaches and Cream Baked French Toast is a delicious and indulgent breakfast dish perfect for any occasion.


Ingredients

Scale
  • 1 loaf French bread cut into one inch cubes
  • 2 ½ cups chopped peaches
  • 8 ounces cream cheese cut into 16 cubes
  • 8 eggs
  • 2 cups milk
  • ½ cup heavy cream
  • ¾ cup sugar
  • 2 tablespoons vanilla
  • ½ teaspoon cinnamon
  • Topping:
  • ½ cup all-purpose flour
  • ½ cup packed light brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 8 tablespoons butter chilled

Instructions

  1. Spray an 9 X 13-inch baking dish with cooking spray.
  2. Place half of the bread cubes into the prepared baking dish and evenly distribute half of the peach pieces and half of the cream cheese cubes.
  3. Place the remaining bread cubes on top along with the remaining peaches and cream cheese.
  4. In a medium bowl, whisk together eggs, milk, cream, sugar, vanilla and the 1/2 teaspoon cinnamon.
  5. Evenly pour mixture over the bread and peaches.
  6. Cover with plastic wrap and place into refrigerator to sit overnight.
  7. In a medium bowl, combine flour, brown sugar, and teaspoon cinnamon, nutmeg, and salt. Mix thoroughly.
  8. Cut butter into small pieces and with a pastry cutter or two forks, blend butter into mixture until it resembles coarse meal.
  9. Place mixture into a plastic bag. Seal and refrigerate overnight.
  10. When ready to bake the next morning, preheat oven to 350° F.
  11. Uncover the baking dish and sprinkle the butter mixture evenly around the top.
  12. Bake uncovered for 45 – 55 minutes. 45 minutes will give you a softer, slightly unfinished middle whereas 55 minutes will be firmer.

Notes

  • This dish can be prepared the night before for convenience.
  • For a twist, add nuts or other fruits to the mixture.
