Description

A refreshing and tropical fruit salad that combines fresh fruits with a delicious pina colada dressing.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled and halved
  • 1 cup seedless red grapes
  • 1 cup seedless green grapes
  • 1 cup fresh blueberries
  • 1 cup canned pineapple chunks, drained; reserve juice
  • ½ cup loosely packed sweetened coconut flakes
  • ⅓ cup non-alcoholic pina colada mix
  • ¼ cup pineapple juice
  • ¼ teaspoon coconut extract
  • ¼ teaspoon almond extract

Instructions

  1. To a large bowl, add the strawberries, grapes, blueberries, pineapple chunks, and optional coconut; set aside.
  2. To a medium bowl, add the pina colada mix, pineapple juice, extracts, and whisk to combine. Depending on how ‘saucy’ you like your fruit salad, feel free to add more pina colada mix or pineapple juice.
  3. Pour over the fruit, toss to combine, and refrigerate to chill before serving.

Notes

  • For added texture, consider adding nuts or other tropical fruits like mango or banana.
  • Ensure all fruits are fresh for the best flavor.
  • This salad can be prepared a few hours in advance, just add the dressing before serving.
