Pineapple Brown Sugar Glazed Chicken Bites are tantalizing bites of chicken coated in a sweet and savory pineapple-brown sugar glaze.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup fresh pineapple, diced
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a medium bowl, whisk together the brown sugar, soy sauce, rice vinegar, cornstarch, garlic, and ginger until smooth. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes, or until the chicken is browned and cooked through.
- Pour the pineapple and sauce mixture over the chicken in the skillet. Stir to coat the chicken evenly.
- Add the diced pineapple and bring the mixture to a simmer. Cook for an additional 3-5 minutes, allowing the sauce to thicken and the flavors to meld.
- Remove from heat and garnish with chopped green onions before serving.

- Use fresh pineapple for the best flavor.
- Adjust the sweetness by adding more or less brown sugar to taste.
