Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple, diced
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. In a medium bowl, whisk together the brown sugar, soy sauce, rice vinegar, cornstarch, garlic, and ginger until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes, or until the chicken is browned and cooked through.
  3. Pour the pineapple and sauce mixture over the chicken in the skillet. Stir to coat the chicken evenly.
  4. Add the diced pineapple and bring the mixture to a simmer. Cook for an additional 3-5 minutes, allowing the sauce to thicken and the flavors to meld.
  5. Remove from heat and garnish with chopped green onions before serving.
