  • 2 cans pineapple chunks, 20 ounces each, drained
  • 8 ounces cream cheese, cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9×13-inch baking dish, spreading it evenly over the bottom.
  3. In a medium mixing bowl, whisk together the beaten egg, milk, all-purpose flour, granulated sugar, baking powder, and salt until smooth and well combined.
  4. Pour the batter evenly over the melted butter. Do not stir. The layers will bake together and create a soft, buttery cobbler texture.
  5. Arrange the drained pineapple chunks evenly over the batter.
  6. Scatter the cream cheese cubes over the pineapple, spacing them throughout the dish so every serving has creamy pockets.
  7. Bake for 45 minutes, or until the top is golden brown and the edges are bubbling.
  8. Let the cobbler cool for 5–10 minutes before serving.
