- 2 cans pineapple chunks, 20 ounces each, drained
- 8 ounces cream cheese, cut into small cubes
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter and pour it into a 9×13-inch baking dish, spreading it evenly over the bottom.
- In a medium mixing bowl, whisk together the beaten egg, milk, all-purpose flour, granulated sugar, baking powder, and salt until smooth and well combined.
- Pour the batter evenly over the melted butter. Do not stir. The layers will bake together and create a soft, buttery cobbler texture.
- Arrange the drained pineapple chunks evenly over the batter.
- Scatter the cream cheese cubes over the pineapple, spacing them throughout the dish so every serving has creamy pockets.
- Bake for 45 minutes, or until the top is golden brown and the edges are bubbling.
- Let the cobbler cool for 5–10 minutes before serving.
- Serve warm with vanilla ice cream, whipped cream, or a light dusting of powdered sugar if desired.
Notes
- For the best texture, do not stir the layers before baking.
- You can also use pineapple tidbits instead of chunks for smaller fruit pieces.
