Description

A refreshing Pineapple Mango Mocktail that’s perfect for quenching your thirst on a hot day.


Ingredients

Scale
  • 2 tablespoons fresh lime juice
  • 1 cup fresh or frozen pineapple chunks
  • 1 cup frozen mango pieces
  • ¼ cup coconut water
  • 1 cup ice cubes
  • 4 ounces rum (optional)
  • Lime wedge (for rim)
  • Sugar or salt (for rim)

Instructions

  1. Place all the ingredients in a blender and pulse until smooth. Too thick? Add a little more coconut water or lime juice. Too thin? Add more frozen fruit or ice cubes.
  2. Rim the glasses by cutting a wedge from a lime and rub it all along the rim of the glass.
  3. Add sugar to a shallow bowl and place the glass upside down in the bowl so the sugar sticks to the lime juice on the rim.
  4. Pour the mocktail into a glass and garnish with a lime slice, pineapple wedge, or umbrella – enjoy!
  5. If you want to turn this mocktail into a cocktail, add the rum to the blender at the same time as the other ingredients.
