Description

Delicious and crispy potato pancakes filled with savory beef and gooey cheese, perfect for a delightful meal.


Ingredients

  • 4 medium potatoes, peeled & grated
  • 2 large eggs
  • 2 tbsp flour (or cornstarch for gluten-free)
  • 1/4 tsp garlic powder
  • Salt & black pepper to taste
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese
  • Vegetable oil for frying
  • Fresh parsley for garnish

Instructions

  1. Grate the potatoes and squeeze out as much liquid as possible using a clean towel.
  2. Mix the potatoes with eggs, flour, garlic powder, salt, and pepper until fully combined.
  3. Cook the ground beef in a skillet over medium heat until browned. Add onion and garlic, and cook until soft.
  4. Season the beef with paprika, cumin, salt, and pepper, then let it cool slightly before assembling.
  5. Flatten some potato mixture into a thin pancake shape, add a spoonful of beef filling and sprinkle with cheese.
  6. Cover with another thin layer of potato mixture and seal the edges gently.
  7. Heat oil in a skillet over medium heat and cook each stuffed pancake for about 3-4 minutes per side until golden and crispy.
  8. Sprinkle with fresh parsley and serve hot.

Notes

  • Make sure to squeeze out the liquid from the grated potatoes for extra crispiness.
