Description

A hearty breakfast bowl packed with potatoes, sausage, and eggs, perfect for starting your day.


Ingredients

Scale
  • 1 pound ground pork sausage
  • 6 medium-size potatoes – peeled and diced
  • 6 large eggs
  • ½ cup whole milk
  • 1 cup sharp shredded cheese
  • ½ cup green bell pepper – diced
  • ½ cup red bell pepper – diced
  • ½ cup yellow onion – diced
  • ½ teaspoon garlic salt
  • ½ teaspoon seasoned salt
  • ½ cup olive oil

Instructions

  1. Peel and dice potatoes into cubes.
  2. Rinse the potatoes and place them in cold water.
  3. Heat a skillet on medium heat and coat the bottom of the pan with olive oil – about ½ cup.
  4. Drain the water from the potatoes and add them to the pan.
  5. Stir the potatoes and toss them in the olive oil.
  6. Stir the seasoned salt and garlic salt into the potatoes.
  7. Stir occasionally to ensure the potatoes do not burn and cook evenly. Adjust the heat as needed to ensure that the potatoes do not brown too fast.
  8. Cook for 20-30 minutes or until the potatoes are tender on the inside and slightly crispy on the outside.
  9. Once the potatoes are fully cooked, remove them from the pan and sit them to the side.
  10. Add the sausage to the pan and cook until brown.
  11. Once the sausage is cooked, remove it from the pan and drain the excess oil.
  12. Sauté the vegetables until they soften then remove them from the pan and sit them to the side. (Add oil to the pan if needed to sauté the vegetables.)
  13. Add the eggs and milk to the pan and scramble.
  14. Once the eggs are cooked, add the potatoes, sausage, peppers, and onions back into the pan/skillet and stir together.
  15. Stir in the cheese, serve and enjoy!

Notes

  • Adjust the seasoning to taste.
  • You can use other types of sausage or vegetables based on preference.
  • This dish can be made ahead and reheated.
