Delicious peanut butter cookies with a surprise Reese’s Egg center, perfect for Easter or any time you crave a sweet treat.

- 1 cup peanut butter
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 package Reese’s Eggs (mini)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together peanut butter, sugar, brown sugar, egg, vanilla extract, baking soda, and salt until smooth.
- Roll the dough into small balls, about 1 inch in diameter.
- Place a Reese’s Egg in the center of each ball and gently wrap the dough around it.
- Place the cookies on a baking sheet lined with parchment paper, spacing them apart.
- Bake for 10-12 minutes or until edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

- Be sure to let the cookies cool completely for the best texture.
- These cookies can be stored in an airtight container for up to one week.
- You can substitute milk chocolate or white chocolate eggs if desired.
