Description

Delicious roasted garlic sweet potato wedges served with a creamy roasted garlic mayonnaise sauce.


Ingredients

  • 3 medium sweet potatoes
  • 1 tablespoon cornstarch
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 2 tablespoon oil plus more for the garlic
  • flaky sea salt to taste
  • 1 head garlic
  • 1 tablespoon oil
  • ½ cup mayonnaise
  • 1 teaspoon lemon juice

Instructions

  1. Rinse the sweet potatoes and cut each one in half lengthwise. Cut each half lengthwise into four wedges. Soak the wedges in cold water for 30 to 60 minutes.
  2. Drain the potatoes thoroughly and pat them dry. Place them in a resealable bag with cornstarch, seal, and shake to coat.
  3. Add smoked paprika, garlic powder, onion powder, and black pepper to the bag. Seal and shake again to distribute the seasoning.
  4. Preheat the oven to 450°F (232°C). Remove the loose skin from the garlic, slice off the top, drizzle with 1 tablespoon oil, and wrap in foil.
  5. Place the foil-wrapped garlic in the oven while it preheats. Arrange the seasoned wedges in a single layer on a parchment-lined baking sheet and drizzle with the remaining 2 tablespoons oil.
  6. Bake the wedges for 15 minutes. Turn each piece and continue baking for another 15 minutes until browned and tender. Keep the garlic in the oven during baking.
  7. After baking, switch off the oven and leave the wedges inside for 10 minutes for additional crisping.
  8. Unwrap the garlic, let it cool, then squeeze the softened cloves into a bowl. Mash with mayonnaise and lemon juice, adjusting the garlic to taste.
  9. Remove wedges from the oven, season with flaky sea salt, and serve immediately with the roasted garlic mayonnaise.
