Description
A delicious twist on classic baked potatoes, these Smoked Hasselback Potatoes are infused with flavor from garlic and cheese, perfect for your next barbecue.
Ingredients

- 4 medium sized Russet potatoes, washed and dried
- ¼ cup melted butter
- 2 teaspoons minced garlic
- 8 slices sharp cheddar cheese
- 2 Tablespoons chopped chives
- Salt and pepper to taste
Instructions
- Start smoker and set it to 350 degrees Fahrenheit.
- Cut each potato into about 8 slices, making sure not to cut through the bottom of the potato. Use chopsticks on each side of the potato to prevent cutting all the way through.
- Place each potato onto the center of a heavy-duty aluminum foil sheet about 14” x 12”.
- Combine melted butter and garlic in a small bowl and brush it on the potatoes, ensuring it gets between the slices.
- Wrap the potato in foil and place on the smoker for about 40 minutes or until fork tender.
- Remove from smoker, cut each piece of cheese into about 8 slices, and place one in between each slice of potato. Return to the smoker to melt the cheese, without wrapping the foil around them.
- Remove from smoker and sprinkle with chives. Serve immediately.
Notes
- Ensure to wash and dry the potatoes thoroughly before preparing.
- Feel free to add your favorite herbs or spices for added flavor.
