Description

A delicious twist on classic baked potatoes, these Smoked Hasselback Potatoes are infused with flavor from garlic and cheese, perfect for your next barbecue.


Ingredients

  • 4 medium sized Russet potatoes, washed and dried
  • ¼ cup melted butter
  • 2 teaspoons minced garlic
  • 8 slices sharp cheddar cheese
  • 2 Tablespoons chopped chives
  • Salt and pepper to taste

Instructions

  1. Start smoker and set it to 350 degrees Fahrenheit.
  2. Cut each potato into about 8 slices, making sure not to cut through the bottom of the potato. Use chopsticks on each side of the potato to prevent cutting all the way through.
  3. Place each potato onto the center of a heavy-duty aluminum foil sheet about 14” x 12”.
  4. Combine melted butter and garlic in a small bowl and brush it on the potatoes, ensuring it gets between the slices.
  5. Wrap the potato in foil and place on the smoker for about 40 minutes or until fork tender.
  6. Remove from smoker, cut each piece of cheese into about 8 slices, and place one in between each slice of potato. Return to the smoker to melt the cheese, without wrapping the foil around them.
  7. Remove from smoker and sprinkle with chives. Serve immediately.
