Description

A delicious smoked peach cobbler that’s perfect for summer gatherings.


Ingredients

  • 8 cups sliced peaches
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 tablespoons cornstarch
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 ½ cup all-purpose flour
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water
  • ¾ cup brown sugar
  • ¼ cup all-purpose flour
  • ¾ cup chopped pecans
  • ¼ cup butter, melted

Instructions

  1. Preheat the smoker to 300 degrees and spray a 12-inch cast iron pan with non-stick cooking spray. Set aside.
  2. Add sliced peaches, sugar, brown sugar, cornstarch, cinnamon, and nutmeg to a large bowl. Stir and let sit for 5 minutes, stir and pour into the prepared baking dish.
  3. In a medium bowl, whisk flour, sugar, brown sugar, baking powder and salt together.
  4. Using a pastry cutter or a fork, cut butter into flour mixture until crumbly.
  5. Pour boiling water into the flour mixture and stir until combined.
  6. Spoon mixture over peaches and spread evenly making sure to cover all the peaches.
  7. In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  8. Spoon brown sugar pecan mixture evenly over cobbler topping.
  9. Place the cast iron pan directly on the grate and smoke cobbler for 1½ hours – 2 hours, or until the cobbler topping is golden.
  10. Serve warm with a scoop of vanilla ice cream.

Notes

  • Make sure to choose ripe peaches for the best flavor.
  • You can adjust the sweetness by varying the amount of sugar used.
  • For an extra kick, add a splash of bourbon to the peach filling.
