Instructions
- Preheat your oven to 350°F (175°C) and spread the chopped pecans on a baking sheet to toast them for about 8-10 minutes until fragrant.
- In a saucepan over medium heat, combine the sugar, butter, and heavy cream. Stir continuously until the mixture comes to a boil.
- Reduce the heat and let it simmer for about 5-7 minutes until it reaches a soft-ball stage (around 235°F or 113°C on a candy thermometer).
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Fold in the toasted pecans until they are evenly coated with caramel.
- Drop spoonfuls of the caramel-pecan mixture onto a parchment-lined baking sheet and allow them to cool and set.
