Description

Irresistibly soft and delicious Sour Cream Coffee Cake Bites topped with a crumbly topping and a sweet glaze.


Ingredients

Scale
  • 3 tablespoons butter, melted (for crumb topping)
  • 1/3 cup brown sugar, packed (for crumb topping)
  • 1 teaspoon ground cinnamon (for crumb topping)
  • 1/2 cup all-purpose flour (for crumb topping)
  • 3 tablespoons butter, melted (for mini muffins)
  • 1/2 cup full fat sour cream (for mini muffins)
  • 1/2 cup brown sugar, loosely packed (for mini muffins)
  • 1/2 teaspoon ground cinnamon (for mini muffins)
  • 1/2 teaspoon salt (for mini muffins)
  • 1 egg (for mini muffins)
  • 1 teaspoon vanilla extract (for mini muffins)
  • 1 cup all-purpose flour (for mini muffins)
  • 1/2 tablespoon baking powder (for mini muffins)
  • 1/3 cup powdered sugar (for glaze)
  • 1/2 tablespoon cream or milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F. Spray mini muffin pan with nonstick cooking spray or grease with oil. *I don’t recommend using liners.
  2. For the crumb topping, combine melted butter, brown sugar and cinnamon using a fork. Mix in the flour until fully incorporated. Continually mix until mixture is crumbly. Set aside.
  3. In a large bowl, cream together melted butter, sour cream, brown sugar, cinnamon, and salt until smooth.
  4. Beat in the egg and vanilla extract. Add flour and baking powder and mix until incorporated (batter will be thick). Do not over mix.
  5. Scoop batter into the mini muffin pan filling the cups about halfway. Top each muffin with a generous amount of crumb topping and press it gently into the batter.
  6. Bake for 10 – 11 minutes until toothpick inserted comes out mostly clean. Cool in pan for 5 minutes then remove.
  7. For the glaze, mix together powdered sugar, cream/milk, and vanilla extract in a small bowl. If glaze is too thick add a splash more cream/milk.
  8. Drizzle the glaze over muffins and serve.

Notes

  • Do not over mix the batter to ensure muffins remain soft.
  • For a thicker glaze, reduce the amount of cream or milk added.
  • These coffee cake bites are best served warm or at room temperature.
