Description
A delicious pull-apart garlic bread made with sourdough discard, perfect for sharing.

- 1 cup sourdough discard
- 3 cups all-purpose flour
- 1 cup warm water
- 2 teaspoons instant yeast
- 1 teaspoon salt
- ¼ cup sugar
- ½ cup unsalted butter, melted
- 4 cloves garlic, minced
- ¼ cup fresh parsley, chopped
- 1 cup shredded mozzarella cheese
- Optional: 2 tablespoons grated Parmesan cheese
- Optional: pinch of red pepper flakes
Instructions
- In a large bowl, whisk together the sourdough discard, warm water, and instant yeast. Let this mixture sit for about five minutes until it starts bubbling slightly.
- Add in the flour, salt, and sugar, and stir until it forms a shaggy dough.
- Transfer the dough to a lightly floured surface and knead for about ten minutes until smooth and elastic.
- Place the dough back in a clean bowl, cover, and let it rise in a warm spot for about one hour or until doubled in size.
- While the dough rises, make garlic butter by combining melted butter, minced garlic, and chopped parsley in a small bowl.
- Once the dough has risen, gently punch it down to release air bubbles. Roll it out into a rectangle about ½-inch thick.
- Brush the surface with garlic butter and sprinkle mozzarella cheese over it.
- Cut the dough into small squares or rectangles and stack them vertically in a greased loaf pan or bundt pan.
- Cover and let it rest for another 30 minutes to rise a second time.
- Preheat your oven to 350°F (175°C) and bake the loaf for 30-35 minutes until golden brown and sounds hollow when tapped.
- Let the bread cool for at least ten minutes before serving.

- Ensure your sourdough discard is at room temperature before mixing.
