Description

A delicious pull-apart garlic bread made with sourdough discard, perfect for sharing.


Ingredients

  • 1 cup sourdough discard
  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 4 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 1 cup shredded mozzarella cheese
  • Optional: 2 tablespoons grated Parmesan cheese
  • Optional: pinch of red pepper flakes

Instructions

  1. In a large bowl, whisk together the sourdough discard, warm water, and instant yeast. Let this mixture sit for about five minutes until it starts bubbling slightly.
  2. Add in the flour, salt, and sugar, and stir until it forms a shaggy dough.
  3. Transfer the dough to a lightly floured surface and knead for about ten minutes until smooth and elastic.
  4. Place the dough back in a clean bowl, cover, and let it rise in a warm spot for about one hour or until doubled in size.
  5. While the dough rises, make garlic butter by combining melted butter, minced garlic, and chopped parsley in a small bowl.
  6. Once the dough has risen, gently punch it down to release air bubbles. Roll it out into a rectangle about ½-inch thick.
  7. Brush the surface with garlic butter and sprinkle mozzarella cheese over it.
  8. Cut the dough into small squares or rectangles and stack them vertically in a greased loaf pan or bundt pan.
  9. Cover and let it rest for another 30 minutes to rise a second time.
  10. Preheat your oven to 350°F (175°C) and bake the loaf for 30-35 minutes until golden brown and sounds hollow when tapped.
  11. Let the bread cool for at least ten minutes before serving.
