A comforting and delicious squash casserole made with layers of squash, creamy filling, and a buttery cracker topping.

- 3 tablespoons unsalted butter
- 2 pounds yellow squash, ends trimmed and cut into ¼–1/3 inch thick rounds
- 1 medium onion, chopped (about 1 cup)
- Salt & ground black pepper to taste
- 2 large eggs
- ½ cup cream
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 cup shredded cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon ground paprika
- Ground black pepper to taste
- ½ cup shredded cheddar cheese (for topping)
- 3 tablespoons unsalted butter, melted (for topping)
- 1 sleeve buttery crackers, crushed (for topping)
Instructions
- Grease a 9×13 inch casserole dish. Preheat the oven to 350°F.
- Melt 3 tablespoons unsalted butter in a large skillet over medium heat. Add the yellow squash and chopped onion, season with salt and pepper, and cook for 5-10 minutes until tender.
- Place the cooked mixture in a colander to drain excess liquid for 5 minutes and gently blot with paper towels.
- In a large bowl, whisk together the eggs, cream, sour cream, mayonnaise, cheddar cheese, salt, garlic powder, paprika, and black pepper. Stir in the drained and cooled squash mixture.
- Spread the filling in the prepared casserole dish and top with the remaining cheddar cheese.
- Combine the melted butter with the crushed crackers, then sprinkle evenly over the casserole.
- Bake at 350°F for 20-30 minutes until bubbly and golden. Allow to cool for 5 minutes before serving.
Notes
- Make sure to drain the squash well to prevent a watery casserole.
- Can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add herbs like thyme or parsley for extra flavor.
