Description

A comforting and delicious squash casserole made with layers of squash, creamy filling, and a buttery cracker topping.


Ingredients

  • 3 tablespoons unsalted butter
  • 2 pounds yellow squash, ends trimmed and cut into ¼1/3 inch thick rounds
  • 1 medium onion, chopped (about 1 cup)
  • Salt & ground black pepper to taste
  • 2 large eggs
  • ½ cup cream
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground paprika
  • Ground black pepper to taste
  • ½ cup shredded cheddar cheese (for topping)
  • 3 tablespoons unsalted butter, melted (for topping)
  • 1 sleeve buttery crackers, crushed (for topping)

Instructions

  1. Grease a 9×13 inch casserole dish. Preheat the oven to 350°F.
  2. Melt 3 tablespoons unsalted butter in a large skillet over medium heat. Add the yellow squash and chopped onion, season with salt and pepper, and cook for 5-10 minutes until tender.
  3. Place the cooked mixture in a colander to drain excess liquid for 5 minutes and gently blot with paper towels.
  4. In a large bowl, whisk together the eggs, cream, sour cream, mayonnaise, cheddar cheese, salt, garlic powder, paprika, and black pepper. Stir in the drained and cooled squash mixture.
  5. Spread the filling in the prepared casserole dish and top with the remaining cheddar cheese.
  6. Combine the melted butter with the crushed crackers, then sprinkle evenly over the casserole.
  7. Bake at 350°F for 20-30 minutes until bubbly and golden. Allow to cool for 5 minutes before serving.

Notes

  • Make sure to drain the squash well to prevent a watery casserole.
  • Can be made ahead of time and stored in the refrigerator before baking.
  • Feel free to add herbs like thyme or parsley for extra flavor.
