Description

Stuffing Stuffed Chicken Breasts are deliciously seasoned chicken breasts filled with rich stuffing made from hearty bread and fresh ingredients.


Ingredients

  • 2 cups stale French bread, cubed into 1/2 to 1-inch pieces
  • 2 tablespoons unsalted butter
  • ½ cup white onion, finely chopped
  • ½ cup celery, diced
  • 2 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried thyme, or 3/41 teaspoon fresh thyme
  • ½ teaspoon dried sage, or 3/41 teaspoon fresh sage, finely minced
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely minced
  • 4 large boneless skinless chicken breasts (8 to 10 ounces each)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper, or to taste

Instructions

  1. Preheat oven to 375°F and spray a baking dish with cooking spray.
  2. If using boxed stuffing, prepare according to the package directions or reheat leftover stuffing in the microwave.
  3. Cube the French bread and let air dry overnight on a baking sheet.
  4. In a skillet, add butter, onions, and celery; sauté over medium-high heat for about 5 minutes.
  5. Add garlic, Italian seasoning, thyme, and sage; sauté for 1 minute.
  6. Mix stale bread cubes with the vegetable mixture, drizzle in broth, and add Parmesan and parsley.
  7. Make a pocket in each chicken breast by slicing lengthwise.
  8. Stuff chicken breasts with prepared stuffing, using about 1/3 to 1/2 cup per breast.
  9. Place stuffed chicken in a baking dish and drizzle with olive oil; season with remaining Italian seasoning, garlic powder, paprika, salt, and pepper.
  10. Cover with aluminum foil and bake for 25 minutes, then uncover and bake for an additional 12-15 minutes until the internal temperature reaches 165°F.
  11. For extra crispy stuffing, broil for 1-3 minutes if desired.
  12. Garnish with fresh herbs if using, and let rest before slicing to serve.
