Ingredients

  • 1 pound chicken tenderloins, cubed (can use boneless chicken thighs or breasts)
  • ¼ cup cornstarch
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 Tablespoons oil (avocado, light olive oil, etc.)
  • ½ cup sweet chili sauce
  • ¼ cup low sodium soy sauce
  • 2 Tablespoons seasoned rice vinegar
  • 1 teaspoon red pepper flakes (optional)
  • 4 garlic cloves, minced
  • 2 teaspoons fresh ginger, grated (or ¼ teaspoon ground ginger)
  • 2 teaspoons paprika
  • 2 Tablespoons honey
  • 2 Tablespoons sliced green onions (optional)
  • 1 Tablespoon sesame seeds (optional)

Instructions

  1. In a bowl or ziploc bag, combine 1 pound chicken tenderloins, cubed, 1/4 cup cornstarch, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder. Ensure the chicken is fully coated and set aside.
  2. Over medium heat, add 2 Tablespoons oil. Once hot, add the seasoned chicken. Cook for 5-7 minutes until the juices run clear, flipping the chicken halfway through for even cooking.
  3. If the chicken starts to stick, feel free to add more oil, especially if using a stainless steel pan.
  4. Add ½ cup sweet chili sauce, ¼ cup low sodium soy sauce, 2 Tablespoons seasoned rice vinegar, 1 teaspoon red pepper flakes, 4 minced garlic cloves, 2 teaspoons grated fresh ginger, 2 teaspoons paprika, and 2 Tablespoons honey to the skillet. Stir for 2-3 minutes until the sauce thickens.
  5. Top the dish with 2 Tablespoons sliced green onions and 1 Tablespoon sesame seeds if desired.
