Ingredients
Scale
- 12 medium jalapeño peppers halved lengthwise and seeded
- 1 tbsp olive oil (15ml)
- 1/4 tsp kosher salt (1g)
- 8 oz brie cheese (225g, rind removed and diced small)
- 1 cup fresh blueberries (150g, divided into 3/4 cup and 1/4 cup)
- 1/4 cup granulated sugar (50g)
- 1 tbsp fresh lemon juice (15ml)
- 1 tsp fresh thyme leaves (1g, scattered for garnish)
- 1/2 tsp black pepper flakes (1g, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the seeded, halved jalapeño peppers in olive oil and kosher salt.
- Arrange cut-side up on a parchment-lined baking sheet.
- Roast for 8-10 minutes until tender and bright green.
- Remove the peppers from the oven and stuff each cavity with the diced brie cheese.
- Return to the oven for 5-7 minutes until the cheese is a bubbly melted gooey white texture.
- In a small saucepan over medium heat, combine 3/4 cup of the blueberries, sugar, and lemon juice.
- Simmer for 8-10 minutes, smashing slightly, until it forms a thick, dark purple sweet blueberry glaze.
- Remove the glaze from the heat and stir in the remaining 1/4 cup of whole blueberries until they blister in the residual heat.
- Spoon the blueberry mixture over the bubbly brie, allowing it to drip slightly down the pepper sides.
- Garnish with fresh thyme leaves and black pepper flakes.
- Serve immediately.
