Description

These are gourmet jalapeño poppers filled with creamy brie cheese and topped with a luscious blueberry glaze, perfect for impressing guests at any gathering.


Ingredients

  • 12 medium jalapeño peppers halved lengthwise and seeded
  • 1 tbsp olive oil (15ml)
  • 1/4 tsp kosher salt (1g)
  • 8 oz brie cheese (225g, rind removed and diced small)
  • 1 cup fresh blueberries (150g, divided into 3/4 cup and 1/4 cup)
  • 1/4 cup granulated sugar (50g)
  • 1 tbsp fresh lemon juice (15ml)
  • 1 tsp fresh thyme leaves (1g, scattered for garnish)
  • 1/2 tsp black pepper flakes (1g, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the seeded, halved jalapeño peppers in olive oil and kosher salt.
  3. Arrange cut-side up on a parchment-lined baking sheet.
  4. Roast for 8-10 minutes until tender and bright green.
  5. Remove the peppers from the oven and stuff each cavity with the diced brie cheese.
  6. Return to the oven for 5-7 minutes until the cheese is a bubbly melted gooey white texture.
  7. In a small saucepan over medium heat, combine 3/4 cup of the blueberries, sugar, and lemon juice.
  8. Simmer for 8-10 minutes, smashing slightly, until it forms a thick, dark purple sweet blueberry glaze.
  9. Remove the glaze from the heat and stir in the remaining 1/4 cup of whole blueberries until they blister in the residual heat.
  10. Spoon the blueberry mixture over the bubbly brie, allowing it to drip slightly down the pepper sides.
  11. Garnish with fresh thyme leaves and black pepper flakes.
  12. Serve immediately.
